Dessert: Cous Cous!

Dessert cous cous is a fave of mine, but ive never mde it myself. Alex had to bring something to a middle eastern themed party, so we made this.

2 cups cous cous, uncooked
2 1/2 cups water
1/4 cup sugar
1 tablespoon cinnamon
1/4 cup pine nuts, toasted with cinnamon
1/2 cup chopped dried dates (figs are good too)

bring water, sugar and cinnamon to a boil. turn off heat, pour in cous cous , stir quickly and cover with a lid. let rehydrate, about 4 minutes, remove lid, throw in nuts and dates, fluff with a fork, being careful not to mush it together. recover for another 3-5 minutes to let dates slightly rehydrate. serve hot or else chilled. serves a LOT. this can be cut in half easily and sweetness/cinnamon can be adjusted. honey can be used in place of sugar, make sure it dissolves in the water before adding cous cous.
